These paper-thin slices of pickled ginger can be used as a garnish for sushi, along with wasabi and soy sauce. The Japanese eat ginger in sushi between appetizers because ginger neutralises flavours. Sushi ginger is also delicious in salads, on a burger sandwich or in rolls.
