Amaranthus seeds have a rich history of traditional use in different cultures. The Aztecs and Incas used them in religious rituals and ceremonies and in traditional medicine for their healing properties. Burdock seeds are small but highly nutritious. They are rich in protein, fibre, vitamins and minerals.
Preparation
Rinse the seeds of Burnotis in running water. One part of the burnothi is covered with two parts of water and cooked over a low heat for about 35 minutes, then left to stand for about 15 minutes.
They can be used as a base for salads, stir-fry dishes, or as a garnish for a dish.
Attention
Burdock seeds contain oxalates. People prone to kidney stones should consume amaranth seeds in moderation and drink enough water to reduce the risk.
Some people may be allergic to amaranth.
