Organic Large White Butter Beans
Organic Large White Butter Beans
Due to their long history and versatility, they have become an important traditional ingredient in both American and Mediterranean cuisine.
In Mediterranean cuisine, large white beans are often baked or stewed with tomatoes, olive oil, garlic, and herbs.
In Peru and other South American countries, lima beans are traditionally used in soups, stews, vegetable dishes, and fresh salads.
Today, these beans are valued for their exceptionally large size, creamy texture, and ability to retain their shape during long cooking.

Preparation
Sort and rinse the beans.
Soak them for 8–12 hours (1 part beans : 3 parts water for soaking).
Drain the soaking water and cover the beans with fresh water.
Cook over low heat until tender — usually 45–90 minutes, or about 30 minutes in a pressure cooker.
Add acidic ingredients, such as tomatoes, only once the beans have already started to soften, as acidity can slow down the cooking process.
They pair perfectly with garlic, onions, bay leaves, thyme, rosemary, olive oil, tomatoes, and smoked paprika.
