Basmati rice is a long-grain aromatic rice originating from the India-Pakistan region, particularly the states of Himachal Pradesh and Uttarakhand. Its Sanskrit name ‘basmati’ means ‘aromatic’ or ‘pleasant smelling’. This rice is valued for its delicate aroma, its long, fine grain and its mild flavour. Basmati rice is mostly grown in monsoon climates and can be either white or brown.
When cooked, basmati rice has a slightly crumbly texture as the grains remain separate and do not clump together. It is an indispensable ingredient in Indian, Pakistani and Middle Eastern cuisines and is used in dishes such as biryani, pulao or as a side dish.
Basmati rice is also valued in the context of a healthy diet as it has a lower glycaemic index than conventional long grain rice. The flavour of this rice is revealed when steamed or soaked before cooking, making it a symbol of sophisticated and exquisite cuisine around the world.

Preparation: cook 1:2 for about 15 minutes over low heat in a covered saucepan, without stirring.
