Ancient Greeks considered it a sacred plant and used it not only for food but also for ceremonial purposes and for weaving wreaths. The Romans valued parsley as a spice and a medicinal herb, believing that it improved digestion and refreshed breathing. During the Middle Ages, parsley spread throughout Europe and became an important part of the cuisine. The method of drying allowed their aroma to be preserved and used all year round.    <\/p>\n<p>Dried parsley is commonly used to flavour soups, sauces, stews and other dishes. They give a mild, fresh taste and a subtle greenness even when fresh herbs are not available. They are also suitable for sprinkling on potatoes and pasta. In addition to its culinary uses, parsley is valued for its vitamins. Although drying reduces some of the nutrients, it remains a useful and flavourful spice in the daily diet.    <\/p>\n<p><em>NOTE.
